Berry Muffins!

This is my go to recipe for the most delicious, fluffy and moist muffins. They also have the hubby endorsed tick of approval!



You should definitely give them a try, they are super easy:

360g plain flour
pinch of salt
1tsp bicarbonate soda
2tsp baking powder
4 free range eggs
270g caster sugar
180ml vegetable oil
275ml sour cream
250g fresh or frozen berries (or you could use choc chips...mmmm)

1. Preheat fan forced oven to 180 degrees Celsius.

2. Lightly grease and line muffin trays. This mixture will make between 12-18 muffins.

3. Sift flour, salt, bicarbonate soda and baking powders into a bowl. Beat egg and sugar in a separate bowl until pale and thickened.

4. Beat egg mixture on lower speed and slowly drizzle in oil then add flour mixture. Mix the batter until just combined then add sour cream and mix for one minute.

5. Gently stir in berries. Spoon the batter into papers leaving room for the mixture to rise.

6. Bake for 15 minutes or until golden brown and set. Remove from oven and allow to cool in pan. Sprinkle icing sugar to finish.
